As Christmas is quickly approaching, now is the time when family traditions are at large. One of my family’s traditions around Thanksgiving and Christmas time is the making and eating of Lefse. My mom grew up in Minnesota and we have a little bit of Norwegian blood in us.

If you aren’t aware of what Lefse is, it resembles the look of a tortilla but is made with potatoes, shortening, sugar and flour. The potato mixture is rolled out very thin and cooked on a heavy griddle or lefse iron. It is typically spread with butter and sprinkled with sugar or cinnamon-sugar, rolled up and deliciously devoured. We recommend serving it warm for a fresh, authentic taste. Or, if you are really hardcore, you can eat it with lutefisk , an aged whitefish preserved in lye. (But that’s best for the brave of heart…)

My mom is the lefse expert in my family. She comes to the bakery during the holiday season and makes batches of them for us to sell. She says that she remembers when her Grandma would make batch after batch of lefse for her nine kids, their spouses and her grandchildren every year for Christmas.
